Caramel Ice Cream Rolls

My Sunday treat this week was a nice light sponge cake rolled around caramel ice cream. It turned out very tasty. One thing to watch out for is overcooking the cake, if you do this the cake will crack when you are rolling. I was able to fix the one crack.
